Recipe: Raw Zucchini Pasta with Olive & Sundried Tomato Sauce

I have to be honest, when I first switched to a 100% raw food diet, I went through a period of mourning over pasta. Prior to going raw, I had been living gluten free for many years, and pasta--specifically brown rice or quinoa pasta--was a regular feature on my comfort food menu.  

So, you can imagine how thrilled I was to discover that I could have the best of both worlds! Yes, you heard me, it is possible to enjoy the endless health benefits of a raw food diet while still chowing down on your favourite pasta dishes. PLUS! If you're like me, you can have the entire huge plate all to yourself and not feel an inch of guilt! Now we're talking.

This zucchini pasta takes only a few minutes to prepare, but it looks elegant enough to grace the table at your next dinner party! 

Raw Zucchini Pasta with Olive & Sundried Tomato Sauce

Here's What You'll Need:

  • 1 large zucchini, washed
  • 4-5 mushrooms
  • 1 tomato
  • 1 clove garlic
  • 6-8 sundried tomatos
  • 1 spring onion
  • 4-5 olives, pitted
  • 2 Tbsp parsley or cilantro (or both!)
  • a pinch of cayenne

1. Prepare your pasta by spiralizing the zucchini. Chop the mushrooms and toss with the pasta. Set aside.

2. In a food processor, pulse together the tomato, garlic, sundried tomatoes, olives, cilantro, and cayenne. Add water bit by bit and continue to pulse until your sauce reaches the consistency you desire. 

3. To serve, spoon sauce on top of zucchini noodles and garnish with fresh cilantro. 

4. Enjoy!

The first time I tried this dish I couldn't even believe it wasn't real pasta! And yes, I ate the entire thing myself. So there.
