In honour of Day 12 of the 14-Day Juice Cleanse Challenge, I decided to amp things up a bit by experimenting with new fruit and veggie combinations. I embraced the experience by introducing a much loved vegetable into my juicing vocabulary for the very first time: sweet red pepper.
The result was just as delicious as I had hoped for. The flavour of the red pepper really shines in this juice, which I love, but if you would prefer a fruitier taste try using only one or two peppers.
Although this recipe doesn't give you the prettiest juice in the world (I guess combining orange, red and green results in brown), it does give you a nutrient-dense and protein-packed (close to 50% d/v of both protein and iron) juice with the sweetness of pineapple and red bell pepper!
This recipe yields approximately 48oz of juice.
Sweet Pepper Pineapple Juice
- 3 small-medium red peppers
- 6-9 carrots
- 1 pineapple
- 2 large kale leaves, chopped
- 1/2 lemon
The vitamin count for this juice is off the charts. This recipe alone will make sure you get more than your daily requirements for all essential vitamins. The power of Mother Nature at it's finest.
